Black Cod with Miso

Ingredient
½ cup sugar
1cup miso, preferably dark
½ cup mirin, sake or white wine
1½ to 2 pounds black cod fillets (skin may be on or off)

Preheat the broiler; position the rack 3 to 4 inches from the heat source. Combine the initial three ingredients in a small saucepan and, over low heat, bring them almost to a boil. Stir occasionally until the mixture is well blended, and it will have a relatively thin consistency. Turn off the heat.
Place the fillets in an ovenproof baking dish or skillet, preferably nonstick, and spoon half of the sauce over them. Broil until the sauce bubbles and starts to brown, then spoon the remaining amount over the fish. Continue to broil, adjusting the heat or rack position if either the sauce or fish is browning too quickly, until the fish is just cooked through. Serve promptly.
